I am a huge fan of homemade dressing. It’s easy, it’s affordable and it’s another great way to reduce waste at home. For summer I love light citrusy dressings, and this lemon dijon vinaigrette is a personal favorite. I’ve been making this for years to put on everything from salad to roasted veggies and potatoes. You can make a big batch and keep it in the fridge or just whip up enough for whatever you’re making. It takes less than 5 minutes and it’s delicious. Not the best photo of the dressing but hopefully gives you an idea of what you’re going for. The most important thing is it tastes really good. I hope you love it. Lemon Dijon Vinaigrette Recipe
Ingredients
- 3 tbsp avocado oil
- 2 tbsp walnut oil
- 1 tbsp white balsamic vinegar
- 1 tbsp dijon mustard (I love this one)
- 1 lemon
- salt and pepper
Combine oil, vinegar, mustard, and juice of lemon and whisk or shake well until mixed. Add salt and pepper to taste and enjoy! A few recipe notes, I use whatever vinegar we have on hand, sometimes rice wine vinegar or white wine vinegar. If you don’t have walnut oil, avocado oil is fine (olive oil works too but it has a more distinct flavor than avocado oil and will change the taste of the dressing).
