Happy Monday. We had a pretty chill weekend, the weather was finally decent so we spent lots of time outside. On Sunday I got on a little bit of a baking kick and decided to finally try and make my own homemade granola. I’ve had the ingredients sitting in my cabinet so I had no excuse. Honestly this homemade granola recipe is so easy and very customizable. You can add more/different nuts, dried fruits, seeds, etc. I would add cinnamon next time but we just ran out so I didn’t have any for this batch. The best part is this only took me about 25 minutes to make and honestly it tastes better than anything I’ve bought at the store. Hope you guys enjoy it!

Ingredients
- 3 1/2 cups organic old fashioned rolled oats
- 3 tbsp organic unrefined coconut sugar
- 1 tbsp hemp hearts
- 1 tbsp organic chia seeds
- 1 tsp vanilla extract
- 1/4 cup maple syrup
- 2 tbsp honey
- 1/4 cup coconut oil or walnut oil
- 1/4 cup raw almonds (optional- you can use sliced or whole)
- 1/4 cup unsweetened dried cherries (optional)
Directions
Preheat oven to 300
Combine rolled oats, coconut sugar, hemp hearts, chia seeds and sliced almonds in a bowl and mix. In a separate bowl combine vanilla, maple syrup, honey and oil. Pour liquid mixture over the oats mixture and stir to combine.
Place parchment paper on baking sheets.
Spread mixture evenly onto baking sheets (I usually need two half sheet pans) and put in the oven on middle rack for 10 minutes.
Stir mixture and leave in the oven for another 10 minutes. Turn the oven to 350 and cook another 5 minutes (keep an eye on it so it doesn’t burn).
Place on a wire rack to cool. It will not feel crunchy right out of the oven, let it cool for 10+ minutes. Add dried fruit.
Store in airtight containers (I use ball jars).

I love baking on Sundays, especially breakfast food! I can’t wait to try this recipe, it looks like it could be enough for most of the week which is great! Happy Monday, xAllie
