Sunday comes around and the doom and gloom of meal prepping for the week creeps up. We end up scrolling endlessly for the best recipes and it’s always disappointing when you try one and it just doesn’t quite taste like you imagined.

With the cold, dark days of winter amongst busy days ahead, there is nothing better than a quick sheet pan dinner to throw together, with little effort and clean up necessary. Sheet pan dinners are meals you can put together quickly with very little prep and dishes necessary and throw into the oven all in one dish or pan. The best thing about sheet pan dinners is you get your whole, nutritious meal all in one dish. You don’t have to worry about making side dishes like salads, rice or potatoes because the sheet pan encompasses it all! Sheet pan dinners are known for being both delicious and healthy as they usually include vegetables, fruits, whole grains and proteins all in one.

Easy Sheet Pan Dinners

Primavera Pasta Bake

Although this is more of a casserole meal, I had to share because we make it time and time again. This Primavera Pasta Bake is a favorite in our house– even for my 19-month old who loves it too! This vegetarian dish has a little bit of everything to make you feel warm and satisfied on a cold winter evening. The combination of the zucchini, asparagus, pasta, cheese and sauce are just perfect! I love that you don’t have to cook the pasta separately. You just throw it all in one dish and voila! It’s also a super easy recipe to switch up if you have food sensitivities. We sometimes switch out the pasta for gluten-free pasta. We love the Tinkyada Gluten Free Brown Rice pasta or Banza chickpea pasta. We also like to add sausage for extra flavor and protein!

Tangy Za’atar Chicken with Veggies

Another recipe from The Healthy Maven, the Tangy Za’atar Chicken with Veggies is such a delicious combination of savory and sweet. The butternut squash and chicken in za’atar spices covered in arugula and dates. And finally the spicy yogurt sauce to top it off make it a perfectly balanced and flavorful meal! Yum!

Sheet Pan Lemon Chicken Recipe with Potatoes, Chickpeas and Kale

Something about lemon and chicken always makes for the most delicious meal and this Sheet Pan Lemon Chicken is no different. The addition of potatoes, chickpeas and kale make it extra delicious and nutritious. I am a big fan of The Healthy Maven’s recipes because they are always so nutritious but never lack in flavor and deliciousness.

A salmon sheet pan dinner is one of my go to favorites and this Garlic Butter Baked Salmon is the perfect easy fish dish to whip up in a jiffy. Asparagus and potatoes always make a great accompaniment to salmon. And the garlic, butter and lemon make for a delicious, savory flavor.

This recipe calls for basil, mozzarella, balsamic glaze, and baby heirloom tomatoes. Make your own dough or buy one from your local market. Yummy!

DIY Sheet Pan Dinner

The great thing about a sheet pan dinner is you can combine all sorts of flavors, spices, veggies and meats to make your own meal. In a pinch and don’t have time to grocery shop? Grab any extra veggies you have hanging around in the fridge or freezer– peppers, onions, zucchini, tomatoes, brussels sprouts or asparagus, throw in some potato variety and add a protein– tofu, chicken, shrimp, fish, sausage or beef. Add your favorite spices, oils, salt and pepper and whip up a yummy sauce. Voila!
