Caramelized Onion & Arugula Pizza Recipe

One of my best friends, Kim, is a fabulous host and always manages to throw together dinners that feel effortless and unfussy but still taste out of this world. On a visit to her house she quickly whipped up this pizza and I’ve since stolen the recipe and added a few of my own touches. It’s so easy and adaptable. Whether you pop it in the oven or put it on the grill it’s a quick weeknight dinner with tons of flavor. Don’t forget to pair it with a glass of your favorite wine or beer. Cheers to an easy dinner.

Start by rolling out a store bought pizza dough. You could make your own dough, but I always just pick up some pre-made and it makes it all so much easier. Place it in a pizza pan or on a pizza stone. Preheat your oven to 425 degrees.
Cut two medium onions into thin slices and sauté them in some olive oil. You don’t need to fully caramelize them (unless you want to) you just want them to be soft. Spread the onions around on your pizza dough. Season with salt, pepper, and garlic power. Sprinkle with gorgonzola cheese, I end up using about half a container. I also added some cherry peppers this time but you can add in pretty much anything to this combination: mushrooms, meat, scallions, apple slices. Whatever works for your taste buds.
Place the pizza in the oven and bake for about 30 minutes. You want the cheese to be bubbly and the crust edges to be brown. While the pie is in the oven mix together some arugula, a few drizzles of olive oil, some balsamic vinegar and some salt and pepper. Toss gently to combine.
Remove the pizza from the oven and let it cool just slightly. Top with your arugula and then give it a few more minutes. The heat will help wilt the arugula.
Slice and enjoy! The combination of flavors is to die for. You might have to prep a second one depending on how many guests you’ve got—these slices go quickly.
