The older I get the less tolerant I am of overly sugary, artificial tasting cocktails. While it used to be no big deal to enjoy a few drinks made with a questionable mix—now it makes me feel terrible the next day. And I like to pretend that it has nothing to do with the fact that I’m now thirty. But really when you choose to indulge—shouldn’t it be with fresh, quality ingredients? The answer is absolutely yes. You heard it hear first! You’re worth the premium alcohol and ingredients.
That’s why I love this easy-to-make watermelon cocktail. It’s light, refreshing and perfect for summer. Because of the tiny ingredient list it’s even more important that the watermelon you use is in season and perfectly ripe. It makes such a difference.
A seedless watermelon
1. Using a melon baller or knife, cut your watermelon into smaller pieces and place them in a large freezer-safe bowl or Tupperware. Freeze them for at least four hours, but longer is better. If you want to do this a day before you can freeze the pieces overnight too.
2. When you’re ready for drinks, fill your blender with the frozen watermelon chunks. For each drink you’re making add a shot of vodka (or two) to the blender. Throw in about ten mint leaves. Blend.
3. Taste and adjust the flavors accordingly, adding more mint, watermelon, or vodka to taste.
4. Garnish with some fresh mint leaves or a small piece of watermelon.
