GREEN APPLE PIE

There were so many apples on the tree in front of my Dad’s house that Craig and I decided we had to do something with them (we still have an entire bag of them sitting on our countertop). Usually the apples are so tart you can’t do much with them, but I took a bite of one and was delightfully surprised at the only slightly tart taste. And there’s nothing better than cooking with ingredients that literally come from your front yard. No pesticides here. I love that the apples aren’t perfect looking either, they have some character! The pie only took us about 25 minutes to prepare and another hour to bake. And it turned out pretty delicious if I day say so myself. If you wanted to try this with red apples I would use a little less sugar in the recipe and add some more salt and lemon juice to balance the sweetness. Good luck and let me know if you try it out!

INGREDIENTS

Glass Pie Dish

2 pie crusts (I like Pillsbury Refrigerated Pie Crust)

6-8 Green Apples

1 Lemon

1 Cup Raw Sugar

1/2 Stick of Butter

1/4 Teaspoon Sea Salt

2 Tablespoons Flour

1/2 Teaspoon Cinnamon

1 Tablespoon Water

Leave Pie Crusts on the Counter while you prepare filling so it is room temperate and pre-heat oven to 350. Wash and peel your apples, I only needed 6 for this pie because the apples were on the bigger side.

After peeling all of your apples cut them into slices. I prefer thin slices but you could cut them into chunks as well. Put all of your dry ingredients in a bowl (cinnamon, flour, sugar, salt).

Place all of your apples in a larger bowl and pour all of the dry ingredients onto the apples.

Add the water and a squeeze of lemon (about one squeeze from half a lemon) and mix up the apples and dry ingredients so they are evenly coated.

Coat your glass pie dish with butter and then line it with your pie crust. Pour filling into crust.
Cut a few slices of butter and place on top of the filling.

For the top crust you can either cut into strips for a lattice crust or place the whole crust on top. For this pie I chose a lattice crust but I think next time I would just put the whole crust on top. Melt some butter and brush it on the crust before you put it on the oven. Cook the pie for about 45 minutes (I think ours actually took closer to an hour). If the crust starts to get too brown you can cover it with tin foil.

About 5 minutes before it’s done sprinkle some sugar on top. Set the pie on a cooling rack and serve alone or with ice cream!
