There is nothing better than fresh, crisp greens, tomatoes from the garden and a homemade dressing on a warm summer day. My taste buds naturally crave more fresh fruits and vegetables during the summer months when they are in season and at their tastiest! I rounded up some of my favorite summer salad recipes to enjoy this summer. There’s something for everyone, even those who don’t normally love greens!

Strawberry Feta Salad
It’s strawberry season in New England and this is my all-time favorite summer salad! In fact, my mom always made this growing up and it reminds me of dinners out on our porch overlooking the green mountains and gorgeous pink sunsets. The combination of salty rich feta, sweet juicy strawberries and spinach is just so perfect.
- 1 bag spinach
- 1 container freshly picked strawberries (sliced)
- 1 container feta
- Almonds (optional)
- 1/2 cup balsamic vinagrette
- 1 cup olive oil
- 1 tablespoon Dijon mustard
- Juice from 1 lemon or 1/4 cup Maple syrup
- Fresh minced garlic (1 clove)
Mix ingredients for dressing in mason jar, shake vigorously. Add one bag of spinach to a salad bowl. Then top with strawberry slices, feta and almonds. Pour desired amount of dressing over salad. Voila!

It is always a crowd-pleaser and just so delicious.
